I don’t think demineralized water is ‘wetter’ than regular water, but I imagine it is safe to use in a humidifier because it’s free from contaminants, calcium, chemicals, hard water minerals etc.

Safe yes, but you might want to mix it up with mineral rich water like natural spring water or mineral water to not miss out on extra nutrients.
